Gluten Free Cream Cheese Sugar Cookies

Picture this: as you’re waiting for your sugar cookie dough to chill, you happen to skim over the ingredients list again, and you notice that you didn’t add enough butter! What do ya know — maybe juggling making DIY dog treats AND human treats… err, sugar cookies..  isn’t a great idea after all! Have you ever spaced out while baking and thought that 1 stick of butter = 1 cup? Welp. I have (side note: 1 stick of butter = 1/2 a cup)… and that’s how these scrumptious babies came into existence! Scrambling to figure out how to salvage my butter-deprived dough, I took the dough out of the fridge, folded softened butter into it, then popped it back in to chill, crossed my fingers… and you know what? It worked! These magically soft, and surprisingly simple, gluten free sugar cookies are a hit.

How to make these Gluten Free Sugar Cookies!

  1. In a large bowl, cream together HALF of the butter and sugar. Add in egg, cream cheese, vanilla extract, and almond extract. Set aside.
  2. In a separate bowl combine Gluten Free All Purpose Flour slowly combine dry ingredients (step 2) into wet ingredients (step 1) until dough forms.
  3. Divide dough in half and lump into two separate “loaves.”
  4. Take remaining softened butter, divide in half, and fold into loaves. Wrap dough in wax or parchment paper and chill for at least an hour.
  5. Preheat oven to 350 degree F. Roll dough out until its roughly 1/4 inch thickness. Cut into desired shape.
  6. Transfer cookies to a silicone baking mat or a greased cookie sheet. Bake for 8-12 minutes until the edges begin to darken crisp.
  7. Allow cookies to cool, then dip in icing. Enjoy!

  • 3 cups Gljuten Free All Purpose Flour
  • 1 cup Sugar
  • 1 cup Softened Butter 1 cup = 2 sticks
  • 1/4 cup Softened Cream Cheese
  • 1 Egg
  • 1/2 tsp Vanilla Extract
  • 1/2 tsp Almond Extract
  • 1/2 tsp Salt
  • 1.5 tsp Baking Powder
  • 1/2 tsp Lemon Juice

Icing

  • 3 cups Powdered Sugar
  • 1/2 tsp Lemon Juice
  • 1/2 tsp Cream of TarTar
  • 2 tbsp Meringue Powder
  • 2 tbsp Milk or Water

  • Combine 3 cups powdered sugar, 1/2 tsp lemon juice, 1/2 tsp cream of tartar, 2 tbsp meringue powder, and 2 tbsp milk or water in a bowl.
  • Whisk until desired consistency - 4-6 minutes.
